For 4 servings you
will need:1 flank steak, 1-1/2 lb.
MARINADE:
1/4 c. oil
1/4 c. fresh lemon juice
3 tbsp. soy sauce
2 cloves garlic, minced or pressed
1 tbsp. brown sugar
1 tsp. dried savory leaves
Chopped parsley for garnish
Place flank steak in a shallow dish. Combine ingredients for marinade.
Pour marinade over meat. Marinate for at least 4 hours in refrigerator.
Remove from marinade. Place meat in a microsafe dish or rack. Microwave at
HIGH power for 5 minutes. Baste with marinade. Turn meat over. Microwave
at HIGH power for another 3 to 4 minutes, basting once with marinade. Let
rest for 5 minutes. Cut meat into thin slices. Sprinkle with parsley.
Serve with lemon butter. Garnish with lemon slices.
LEMON BUTTER
Cream 2/3 cup butter until light. Add 3 tablespoons lemon juice, a little
at a time. Mix in 6 tablespoons finely chopped parsley and 3 tablespoons
chopped watercress. Add dash black pepper. Shape into a roll. Wrap in wax
paper. Chill for flavors to blend. When servings meat, cut into thin
slices.
