Diabetic Recipes for Christmas

Holiday Dressing
8 cups dry bread cubes
1 cup diced celery
1/2 cup minced onion
2 tablespoon poultry seasoning
1 teaspoon dried thyme
1 teaspoon salt
1/2 cup margarine
1/2 cup chicken stock or water

Measure bread cubes, celery, onion, poultry seasoning, thyme, and salt into a large bowl.

Heat margarine and stock to boiling. Pour onto bread cubes.
Mix lightly and stuff before roasting.
Yield: about 8 cups or enough for a 10 pound turkey.

Serving: 1/2 cup
2-1/2 starch/bread exchanges, 1 1/2 fat exchanges

Stuffed Celery
6 celery stalks
2 oz. cream cheese, softened
2 tablespoons skim milk

Trim celery stalks and cut into 1 to 2 inch pieces.
Beat cheese and milk in a small bowl until smooth and fluffy.
Fill celery pieces with mixture using a small spoon or spatula.
Yield: 6 servings

Per serving: 1 fat exchange
40 calories, 1 g. protein, 4 g. fat, 1 g. carbohydrate, 57 mg. sodium, 11 mg. cholesterol.


Pineapple-Cranberry Relish
2 c Cranberries (1/2 lb)
1/2 c Gran. sweetener (2 tb.liquid)
1 c Crushed pineapple, drained

Wash cranberries, removing stems and soft berries. Grind raw cranberries, add pineapple and sweetener. This relish is tart, a good accompaniment to turkey or any other meat. It will keep well in the fridge for use with many meals. Remainder of package may be frozen in plastic bag.

Pumpkin Chiffon Pudding
4 servings

1/4 c Water
2 tb sweetener
1 ts Unflavored gelatin
1/2 ts Pumpkin pie spice
2/3 c Pumpkin; canned
1/2 c Frozen whipped non-dairy topping
1/2 c Evaporated skim milk

In a small saucepan combine water and gelatin. Let stand for 5 min. Cook and stir over low heat till gelatin dissolves. Transfer to a medium mixing bowl. Stir in pumpkin, milk, sweetener, and pumpkin pie spice.

Chill till partially set (the consistency of unbeaten egg whites). Fold in whipped topping. Spoon into individual dessert dishes. Chill for 1 to 3 hours or till firm.

Makes 4 servings, each 1/3 cup. 1 serving, 79 calories 4 g protein, 10 g carbohydrate, 3 g total fat, 2 g sat. fat, 1 mg cholesterol
